100% Whole Wheat Bread

Slms can anyone help me with this recipe pls...I wud like to know what kinda of yeast I can use for this wholewhEat bread recipe,100% Whole Wheat Bread

1/2 cup brown sugar2/3 cup lukewarm water2 packages dry yeast1 tablespoon salt2 cups scalded milk6 1/2 cups brown bread flour (whole wheat)2 tablespoons melted butter/oil

Stir 1 teaspoon of the sugar into the water, add yeast, blend well and let stand 10 minutes. Add remaining sugar, salt and butter/oil to hot milk and also let stand until lukewarm. Stir in softened yeast to milk mixture once slightly cool. Stir in 3 cups of the flour. Add remaining flour and mix well. Turn onto lightly floured board and knead 10 minutes. Place in a clean, greased bowl, cover and allow to rise in a warm place for about 1 hour. Divide dough, round up each portion and let rest 10 minutes. Shape into loaves, place into loaf pans and grease top of dough. (Now would be the time to freeze excess) Cover and let rise again, about 1 hour. Bake at 200 degrees for 10 minutes, reduce heat to 180 degrees and bake 40 minutes longer (I only bake mine for 25 - 30 minutes because I make small loaves). Remove bread from pans and cool on bread rack.
