3-Ingredient Shortbread Cookies

I've had many requests recently from busy mums and busy people in general, for quick and simple baking recipes. This particular recipe definitely ticks the box for simplicity and melt in the mouth deliciousness!?

225g softened salted butter 1/2 cup icing sugar 2 cups plain flour


  1. Preheat oven to 180 degrees C.

  2. Grease baking sheets.

  3. Cream together butter and sugar. Add flour and continue to mix until mixture forms a soft dough (it will be crumbly at first, but keep mixing and it will form a soft dough).

  4. Form dough into a cohesive ball with your hands.

  5. Roll dough on a floured surface to a 1cm thickness, make sure the rolling pin is floured too as the dough can be quite sticky.

  6. Cut into rounds and place in prepared baking sheets

  7. Bake for 16-18 minutes. Let cool on baking sheets. Dust with icing sugar.

These crisp, buttery rounds won't last very long!
