3 Nut Curry (Butternut, Coconut n Cashew)

Ingredients:

1 large onion - peeled and diced 1 tbsp masala 4-5 small butternuts (or 2 large ones) - peeled and diced 3/4 cup desiccated coconut 500g cashew nuts - crushed 4 tbsp fresh coriander leaves 1 can of coconut milk/cream

Method

Sauté the onion in a large pot with a bit of oil, over a medium heat. Stir the masala in so that it coats the onions. When they are translucent, and a nice reddish masala colour, mix the butternut in. Put a lid on the pot and simmer until the butternut is soft. Add half a cup of water at a time if the butternut starts getting caught on the bottom of the pot. When the butternut is soft, add the coconut. Then use a blending wand or potato masher to blend the butternut until smooth. Stir in the cashews and coconut milk. Sprinkle with coriander and serve. With basmati rice or roti
