Banana muffins with a spiced crumble topping
These muffins are a perfect way to use up overripe bananas and their soft light texture contrasts so well with the crunchy crumble topping, scrummy! Enjoy!
1 1/2 cups plain flour 1 tsp bicarb 1 tsp baking powder 1/2 tsp salt 3/4 tsp ground cinnamon 3 bananas, mashed 1/2 cup sugar 1/4 cup packed light brown sugar 1 large egg 1/3 cup oil 1 1/2 tsps vanilla extract
for the crumble topping:
1/3 cup packed brown sugar 2 tblsps plain flour 1/8 tsp ground cinnamon 1 tblsp butter
Preheat oven 190 degrees C. Line tray with muffin cases.
In large bowl combine 1 1/2 cups flour, bicarb, baking powder, salt and cinnamon. In another bowl beat together bananas, sugars, oil, and vanilla. Stir the banana mixture into the flour mixture just until moistened. Evenly scoop batter into prepared muffin cases.
Make the Crumble Topping: In a bowl, mix together brown sugar, flour and cinnamon. Cut in butter until evenly distributed and crumbly in texture. Sprinkle topping over muffins.
Bake in preheated oven for 18-20 min, or until a toothpick inserted into centre of muffin comes out clean. Yields 12 muffins.
