As per request from Rugshana, here is the chocolate cake recipe. So here goes:
My favourite choc cake recipe with secret(not anymore) ingredient:
Fill a mug halfway with good quality cocoa, top up with boiling water and mix. Set aside.
Mix the following tog: 4 eggs, 1 cup oil, 1 1/2 cups sugar, and then add the cocoa mix above.
Add 2 cups cake flour and 4 level tsp baking powder. Mix.
Stir in 1/2 grated tomato (a medium one is fine)yes, that's the trick to make it moist.
Bake at 180 dg in a well greased ring tin, until knife comes out clear when tested.
When totally cool, ice with choc ganache topping.
Choc Ganache topping:
Heat 300ml cream
Add 400g chocolate and 30g butter.
Stir all together until choc is melted in the cream.
U can wait until ganache is cooled and then drizzle over cake, or cool it half-way.
Serve cake with whipped fresh cream and seasonal berries. Or heat it up and serve with ice-cream and warm ganache.
