for vetkoek go to SHOPRITE, PNP or checkers and buy the ready dough use that for your vetkoek
Vetkoek Ingredients * 2 cups (500 ml) flour * 2 teaspoons (10 ml) baking powder Or you can replace the flour and baking powder with self-raising flour * 1 tablespoon sugar * ½ t (2 ml) salt * 2 eggs * 1 cup (250 ml) milk * Enough oil for deep-frying (about 12 cm deep) Method 1. Sift the flour, baking powder and the salt together 2. Whisk the egg, milk and sugar 3. Make a well in the dry ingredients, add milk and egg mixture and mix to very soft dough. Add more milk if necessary. 4. Heat the oil to between 180 °C and 190°C. 5. Ladle level spoonfuls of batter into the hot oil (12 cm deep) and bake until brown on both sides, before removing from oil. 6. Use towel paper to absorb the excess oil. Done. It is as simple as that!

Feriel Sonday's Vetkoek
4 cups Cake flour 15 ml salt (level) 50 ml sugar 1 pkt 10 g instant yeast 1 egg 80ml oil 450 ml lukewarm water
mix all dry ingredients together and add liquid to make a soft dough. Knead until soft and smooth. let it rise in bowl for one hour in wondercooker bag. Knock down and cut your vetkoek the size ofyour choice. let it rise again on only surface for 30 minutes. Deep fry until brown. Serve with mince curry with potato cubes Enjoy????

My moms Koesister recipe
Cape Malay Cooking with Fatima Sydow
Ingredients
4&1/2 cups of cake flour
1& 1/2 cups of lukewarm water
1 tsp of baking powder
1 sachet of Instant yeast 10grams
1 tablespoon of sugar
3 tbsp of butter( melted)
1 tsp of salt
1 cup of soft mashed potatoes ( mashed with a little milk and butter)
2-3 teaspoons of grinded or finely chopped dried naartjie peel
1&1/2 tablespoons of freshly grated Ginger or fine ginger
1-2 teaspoons of mix spice
2 tablespoons of aniseed
2 teaspoons cinnamon
1/2 a teaspoon of freshly grounded cardamon seeds
1 egg
Oil for deep frying
Sugar and stick cinnamon for sugaring
Fine coconut
Method
Mix all ingredients together with warm water ( add water until you get a sticky dough ) dough must be very soft.Knead dough for 10 minutes using a little oil on your hands to stop from sticking, rub some oil over dough, cover with cloth and allow to rise for an hour or when double in size. Roll out into little ball shapes and fry in oil on medium to high heat until brown. Sugar and cover with fine coconut.
Sugar Syrup
Boil 3 cups of sugar with 3 cups of water and a few cinnamon sticks for about 30 minutes on medium heat...then simmer when sugaring the koeksister. You can add two naartjie peels as well.
Tip- Dont omit the mashed potatoes- when making it add a little milk with butter when making the mashed potato.
With this recipe adding 1 egg is optional.

2 eggs or 1 extra large egg
*Oil for deep frying
*Sugar and stick cinnamon for sugaring
*Dessicated coconut
Method
Mix all the dough ingredients together until you get a sticky dough. Dough must be very soft.Knead dough for 10 minutes using a little oil on your hands to stop from sticking, rub some oil over dough, cover with cloth and allow to rise for an hour or when double in size in a warm area of the house. Roll out into little ball/ oblong shapes and deep fry in oil on medium to high heat until brown on both sides. Sugar and sprinkle with dessicated coconut.
Sugar Syrup
Boil 3 cups of sugar with 2 cups of water and a few cinnamon sticks on medium heat for 20 to 25 minutes...then put on simmer when sugaring the koeksister. To sugar the koesisters simply place them in the sugar syrup and allow to soak in the syrup for a minute then remove. You can add two naartjie peels as well.
Tip- If the dough is not a soft sticky consistency you will get less of a rise and koesisters won't have a very light texture.

Bollas - MOM
1 egg 2 Tbsn sugar 1½ cup flour 2 tsp baking powder Mix wth milk or buttermilk (or a combination of both)
Mix your sugar and egg, add dry ingredients and fold. Then wet ingredients. Shouldn't be too stiff not too runny. Heat your oil, not too hot. Drop spoonfuls into the oil and fry until done. You can syrup it like a persisted and toss in coconut. It's just so easy and so tasty.
P.S - that's a recipe my mom gave me, hence the title Bollas - mom lol
charmelle7844, you can also toss it in cinnamon sugar, it's equally as good as the syrup and coconut

Easy vanilla cake - MOM
150gr melted butter / ¼-½ cup oil 500ml cake flour 1 cup sugar 4 tsp baking powder ¼ tsp salt 3 big eggs 100ml milk 50ml water 2tsp vanilla essence
Just mix everything together until well combined. Bake at 180°C or until done.
Use for a "plaatkoek", cupcakes or round cakes
