1 kg chicken fillet 1/2 cup coriander 1/2 cup mint 1 t garlic paste 1/4 cup thick yoghurt 2 t crusher cumin 1 t salt 1 t freshly ground pepper 2 t ground green chillies 3 T lemon juice 2 T oil

Make deep slashes on one side of the fillet Liquidize mint, coriander, garlic, pepper and yoghurt Add the remaining spices, lemon juice and marinate overnight Add the remaining yoghurt and cook on a non stick pan, basting with left over marinade.i made half the recipe n added 1/2 freshcream to marinate n 1 tbl chana flour at the end to thicken its like a khuri with meat

Spring Onion Rice

1 1/2 cups rice 4 t salt 4 T ghee 1 med onion, grated 2 t crushed garlic 1 t cumin seeds 1 t ground green chillies 1 t lemon pepper 1 t salt 2 T mayonnaise 1 cup spring onions, chopped 1/4 cup coriander, chopped

Cook rice in salted water and drain Do not make soft Heat ghee and fry onion, garlic and cumin seeds until onions are soft Add green chillies, salt, lemon pepper, and mayonnaise Stir in rice, spring onions and coriander and mix well Steam on low heat for ten minutes
