Eclairs with melted chocolate and fresh cream, banana and caramel

250ml water115g butter1ml salt150g cake flour4 medium to large eggs

Melt butter with water and salt in a saucepan, over moderate heat until the water boils and the butter has melted.

Reduce the heat and add all the cake flour at once.

Stir quickly with a wooden spoon until mixture forms a ball and no longer sticks to the sides of the saucepan.

NB. If you heat it for too long, the eclaires will NOT rise.

Chill in the fridge for 10 minutes.

Remove from fridge and add one egg at a time in a mixer or food processor and mix well before adding the next, until the paste is smooth.

I spoon the mixture on a baking tray using a big teaspoon or 3[4 dst spoon.

Place a bowl of water at the bottom of the oven. Bake for 15 minutes at 200 degrees and then reduce heat to 180 degrees for about 30 minutes.

When removed from oven slice the eclaires immediately to allow the steam to escape.

Makes approx. 20 depending on the size.

It sounds complicated at first, but really very easy.

Decorate with melted chocolate and fresh cream, banana and caramel.
