HOW TO KEEP BACTERIA OUT OF YOUR SOUR CREAM
Bacteria is what causes cottage cheese and sour cream to go bad. If you store them UPSIDE DOWN, it creates a vacuum in the container which stifles the growth of bacteria and they last much longer. Be sure to put a plate underneath! This also works for cottage cheese and yogurt!
I also heard that this also helps keep your ice cream from getting ice crystals. If your ice cream last that long!!!
