1 egg 1 cup of sugar 1 cup of cake flour 1 tsp baking powder 1 tsp baking soda 1 tbs jam 1 tbs Vinegar 1/2 cup milk and 1/2 cup of cream
For sauce -
1/2 a cup of cream 1 cup of milk 1/2 a cup of sugar 3 tablespoons of good butter or margarine 1 tablespoon of vanilla essence
In a bowl whisk with electric mixer your egg, sugar and vanilla essence for a 2 minutes, now add the jam, vinegar, milk and cream, and whisk for a minute till well combined.
Sift the dry ingredients into bowl and mix till all ingredients are combined.
Pour in a square greased tin ( not big pan ) or glassproof baking dish, bake for half an hour at 180 deg or when inserting skewer it comes out clean, also the cake will be a brown colour.
While the cake is baking put all your sauce ingredients in a small saucepan and bring to the simmer and stir till hot - keep warm one side.
When your cake is done take out of oven and immediately pour over all the sauce - it will bubble and that's what you want - it will be a bit wet and that's how a malva pudding should be - a Pudding - not a dry cake.
Serve with custard or cream - The Perfect Winter dessert that I thoroughly enjoy making for my loved ones - Delicious!!!
Please note - if you don't have fresh cream you may use a full cup of full cream milk with 1 tablespoon of soft butter. The same applies for the sauce. For a large pudding simply double all ingredients as I did show in picture.
