CHOCOLATE CUPCAKES (Makes about 36-40 cupcakes)
Bake at 180 degrees
1 cup sugar 5 jumbo eggs 1 ½ cups cake flour 4tsps baking powder ½ cup cocoa 3 quarter cup sunflower oil ½ cup boiling water
1big slab Cadbury chocolate 1 small tin dessert cream 1 tub cream
Mix the sugar and eggs well with a hand mixer
Sift flour, baking powder and cocoa in a mixing bowl Sift again into wet ingredients add the oil While mixing the above add the boiling water Mix well, mixture should be runny
Half the mixture in cupcake holders
Bakes for 10-15min. depending on your oven After 10min. have passed, check on it, it’ll be ready when skewer is dry
Melt chocolate over boiling water, remove, add dessert cream immediately, stirring vigorously with a whisk until its smooth
When cupcakes have cooled down add topping, then just add a small scoop of cream in the middle, dlicious!
Hint – people have told me before that instead of using dessert cream, I should just add milk, I was very skeptical thinking it wouldn’t be the same, but I tried it yesterday and it came exactly the same as with the dessert cream, which works out more expensive, if you are going to use the milk then you should just keep adding a little until you see it’s smooth, hope you enjoy it, let me know how it turned out.
