NO BAKE PEACH TART 1 x As Easy As Pie crunchy granola pie


1 x As Easy As Pie crunchy granola pie crust 225g Mascarpone Cheese 225g Cream Cheese ¾ Cup Confectioners Sugar ½ cup Whipping Cream 1 teaspoon Vanilla Extract Zest of one lemon finely grated 6 peaches, pitted, peeled and sliced ¼ cup Peach Preserve (or orange marmalade)


  1. In the bowl of your stand mixer, blend the mascarpone, cream cheese and confectioners’ sugar until smooth and creamy.

  2. Add the lemon zest and vanilla extract and mix well.

  3. In another bowl, whip the cream until soft peaks appear and fold it into the mascarpone mixture.

  4. Spread the mixture in the tart crust.

  5. Top with the peach slices.

  6. In a small saucepan heat the peach preserve and brush the peaches with the liquefied peach preserves. (This adds a nice glaze to the dessert)

  7. Refrigerate the tart at least 1 hour or overnight before serving.
