Hi I just joined the group today & already I've put on 5kgs just looking at all the nice food.
Here is my recipe for no fuss chicken.
Pierce chicken with a fork. Then depending on how much pieces you have season with 1 or 2 packets of brown onion soup. (do not mix soup with water). Leave in fridge for at least 15 minutes.
Mix half a mug of Mayo with half mug of Chutney (preferably Mrs Balls). Add about 2 mugs of water to the mixture.
Place chicken with skin side down in oven dish & pour liquid mixture over it. I add potato wedges & a few whole cloves of garlic as well.
Bake for an hour at 200degs turning it over after half an hour. Pour excess sauce over chicken towards the end of cooking to keep the skin from drying out.
You can adapt the amount of liquid added to suit your taste.
You do not need to add salt or any other spice.
Serve with savoury rice & any other veggies.
