scrambled eggs preparation

There's just no nice pic of scrambled eggs, so I'll just post the recipe. We often find little bits of veggies left over from a week of cooking. I'm sure everyone has their madness that goes in the pan. Here's mine:

Oil Half an onion, diced 4 mushrooms, sliced and then diced again(otherwise it's too big) 1/4 pepper, diced 1 leaf Spinach (told you I put it in everything, lol) 1 tomato 2 chillies, finely sliced Salt and pepper to taste preference 1 tsp BBQ spice 1 tblsp sugar 6 eggs, whisked with 3/4 cup milk

Method:

  1. Use a pan. Heat oil and braise the onion and peppers till slightly brown.
  2. Add the spinach, mushrooms, chillies and tomato, stir through, then add bbq spice, sugar and salt and pepper.
  3. Allow to cook for about 3 minutes, to soften veggies and cook out some water.
  4. Add the egg mixture. At this point, you can turn it in to a Fritatta. Just stir eggs once, add some cheese and bake in the oven till the egg is set. OR Stir occasionally till you get the yummiest acrambled eggs! Remember to taste for salt content. Enjoy on a sandwich or eat with toast.
