Six -leap year Pudding

Good evening ladies.Good news the magazine publication got back to me with the recipe.It is called District Six -leap year Pudding

100 g soft butter100 g sugar5 ml vanilla essence3 large eggs150 g cake flour10 ml baking powderpinch of salt375 ml milk25 ml castor sugar100 ml apricot jam

Beat butter and sugar together until light.Add the vanilla essence,seperate the eggs.Add the yolk to sugar mixture and beat well.Sift together flour,baking powder and saltAdd to egg yolk mixture alternating with 75 ml of the milkPour mixture into a greased ovenproof dish.Bake in a preheated oven ( 180 degrees) for 30 minutesFive minutes before the pudding comes out of the oven.Beat egg whites with castor sugar until thick ans glossy.Remove pudding from the oven and drizzle with remaining milkSpread with apricot jam and top with meringue.Return pudding to oven and bake for a further five - ten minutes until meringue is golden.Serve warm with custard or cream.Enjoy ladies
