2 eggs1/4 cup oil2 tablespoons strawberry jam1/4 cup strawberry yoghurt1/2 cup castor sugar1 and 3/4 cups Self Raising Flour100g cream cheese1/4 cup strawberry jam,extraIcing sugar and strawberries for decoration
Method: Preheat oven to 180C. Place eggs,oil,jam,yoghurt and sugar in a large bowl. Using a wooden spoon beat mixture until well combined. Add sifted flour,stir until just combined;do not overbeat. Place 2-3 Tbsps into each greased muffin cup. Cut cheese into 8 pieces. Place a piece in the centre of each muffin. Top each piece with 2tsps jam. Divide remaining mixture evenly between muffins. Bake for 30mins or until muffins are puffed and lightly golden. Stand for 5mins. In tin before turning out on wire rack to cool. Dust with icing sugar and decor with strawberries.....makes about 8, I will be waiting ??
