Vanilla Panna Cotta6 to 8 servings

For those of you that are Banting..... Here's a perfectly legal Panna is delicious and very easy to make.

Vanilla Panna Cotta6 to 8 servings

Ingredients2 cups heavy(double) cream1 vanilla pod (if not available, use 1T vanilla essence)1/2 cup sugar (or half Xylitol and half sugar) – I use ALL Xylitol11/2 teaspoons unflavoured gelatin (about 1/2 packet)1/2 cup full cream milk1/2 cup full cream Greek yoghurtSliced strawberries and fresh mint, for garnish (optional)MethodPlace the cream in a saucepan. Halve the vanilla pod lengthwise; scrape out the seeds with a knife, then add the seeds and pod to the saucepan. Add the sugar and bring to a simmer over medium-low heat, stirring occasionally. Discard the vanilla pod.

Sprinkle the gelatine over the milk in a bowl and let stand until the gelatine softens, about 5 minutes. Stir the gelatine mixture into the hot cream mixture until dissolved, then stir in the yoghurt. Divide among six to eight ramekins, cover with plastic wrap and refrigerate until set, at least 6 hours or overnight.

Dip each ramekin three-quarters of the way in warm water and invert onto a plate. Garnish each panna cotta with strawberries and mint, if desired.(I used a nut mixture and raspberries to garnish)
