•Portuguese peri peri chicken

1 chicken butterflied 2 t garlic 1 1/2 t salt 1 t chilli powder 1 t crushed red chillies 1/2 t dhania jeero 1/2 t arad 1t lemon pepper 1T lemon juice

Marinate and cook on high till water burns with ghee.

Sauce:

1 cup fresh cream 2 T tomato paste 3 T nandos garlic peri peri 3 T nandos xtra hot peri peri 1 slice garlic butter

Boil.place cooked chicken in oven tray and pour sauce over

Fry potato wedges, throw arnd chicken and add onion rings and 3 colour julienned peppers. Slit green chillies and chopped dhania

Grill for ± 20 min. Serve with a smile and garlic bread!!

•BBQ Chicken Thighs 1/4 cup Tomato 1 tablespoon soy sauce 1 tablespoon Worcestershire sauce 1 tablespoon lemon juice or vinegar 1 tsp. brown sugar 1/2 tsp. garlic powder 1/4 tsp. salt 1/4 tsp. black pepper

Directions Preheat Oven 180 degrees

Combine all of the ingredients for the bbq sauce in a small bowl.

Clean and pat dry the chicken thighs.

Place in a baking dish and rub the chicken thighs all over with the sauce.

Place in oven and bake for 40-45 minutes.

Directions: Sift flour and add together all the coating ingredients and grind finely with a mortar and pestle and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.

Beat: 1 egg in ¾ cup milk pour dis over marinatd wings! Marinate 4 a few hours

*1cup flour *1Tblsp bp *2Tblp maizena *sprinkle of aromat Coat wings lightly n deep fry till golden! Set in platter n brush wings with spurs famous Durkey sauce! Serve with celery sticks n sourcream!

•Honey BBQ Chicken Wings 18 chicken wings 1 tsp salt ½ tsp sugar ½ tsp paprika ½ tsp black pepper ¼ tsp red chili powder 2 tbsp bbq/monkeygland sauce 2 tbsp honey 2 tbsp tomato sauce 2 tbsp hot sauce/chilli sauce 2 tbsp butter ½ tsp garlic paste

Method Mix well all the ingredients to make a thick sauce. Add the chicken wings & mix well. Marinate the wings for at least 2 hours or over night. Preheat the oven at 180°C. Place the marinated wings into a baking dish & put it in the oven for 35-40 mins or until the sauce is bubbly & the wings r cooked through Turn sides in between

•EASY CHICKEN KEBAABS1 onion - process - add abt 3-4 green chillies and quarter bunch dhania, process agn, add 1 heaped mug of chickn fillet cubed(I used about 1/2kl), 1 egg, 1 heapd tsp dhana jeeroo, 1 heapd tsp salt, 1 tsp white pepper n 1 heaped tsp baking powder, process agn. Drop teaspoonful of mixture in shallow oil(or shape wettin hands so that it doesn stick) n fry on both sides till golden. ( FREEZER SUITABLE NOW ). Bake in oven with 1-2 Tbl lemon juice and a blob of butter. Serve with puris or mini pitas or garlic naan...made 22 medium biggish ones!!! * •Garlic Chicken. 15 pieces cut n wash 1tsp blk pepper 1/2tsp aromat 1Tbsp Chilli sauce 6Tbsp Tomatoe Puree 1/2tsp rough jeeroo 1tsp salt or to taste 2tsp red chillies (to taste) 1Tbsp Roast Masala(chilli/garlic paste) 3Tbsp Lemon juice 1/2Tbsp Fresh Ground Garlic 1/2tsp Garlic Salt 3Tbsp Steers Garlic Sauce

Mix all ingred tog...marinate chicken for a day...cook n add butter when almost done!! B4 serving,put in oven to grill for 10-15mins

•Oven grilled chicken

Chicken fillets (recipe for 4 fillets) Place a cling wrap over the fillet n pound flat with a heavy based pan.

In a dish: mix 1/4 cup mustard sauce, 2 Tblsp water n 2 Tblsp olive oil.

In another dish: mix 3/4 cup bread crumbs, 3/4 cup grated parmesan cheese, 2 Tblsp olive oil.

Dip the fillet in the mustard sauce n thn the bread crumbs......ensure its well coated. Place on an oven tray and bake @ 180 for about 30min.

Serve with chips n salad. Recipe can be adjusted for amount of fillets u making. NB# I spice up my bread crumbs with roasted fine red chillies. If u can't get parmesan cheese, tussers works just as well.
